Meat Loaf with Beef mince


  • 500 grams lean beef mince
  • 1.5 tablespoon Smokey Q Beef Rub
  • 1 large onion diced
  • 2 tablespoons tomato paste
  • 2 carrots grated
  • 1 small zucchini grated
  • ½ red capsicum
  • 1 teaspoons garlic
  • 1 egg
  • 250-gram packet of bacon


Step 1
Set up your kettle or smoker for in-direct cooking or pre-heat your oven to 170c.

Step 2
Place all ingredients into bowl and mix though by hand,if its a little wet just sprinkle in some bread crumbs to tighten it up, another little tip is to cook a spoon full of the meat in a pan and taste for correct seasoning of rub etc

Step 4
Line a loaf tin with grease proof paper and the continue to line with bacon leaving it overlap on top so you can fold it over.

Step 5
Cook in your smoker or domestic oven until internal temp reaches 71c this will ensure its well done.

Step 6
Remove from the oven serve with mashed spud, green peas and another glass of red!
